Comfort food is welcome after the excesses of the holidays. 

A traditional version of Coq au Vin highlights today’s demonstration. You won't want to miss Chef Randall's tips to streamline the operation. 

The traditional French 'Galette des Rois' is pervasive during a six-week period these days, rather than  just on the 6th of January. 

You won’t find a tastier version than the one you'll learn today - and that you can actually make at home. It has a special pastry cream filling and uses quality store-bought, pure butter puff pastry.

Techniques include braising marinated chicken; working with puff pastry; making pastry cream; assembling a two-crust tart.

About the Instructor: Chef Randall Price will share with us his passion for French cuisine, drawing on his 25 years of experience cooking France for heads of state and working as Chef-Instructor at the professional Paris cooking school, Ecole de Cuisine La Varenne. His entertaining style, easy-to-follow demonstrations and focus on classic techniques will inspire you to reproduce dishes at home.
